The reason is that they'll only add it if Google wants it (but it won't do anything for Google, Google said), but not for users. John Mueller says, “I can think of good reasons why some sites would have this kind of page, but upon double checking, there's nothing in the search developer documentation to suggest this is necessary.'' But that doesn't mean you need to remove all “About Us” and “Contact Us” pages from your site. In most cases, users want to know more about your site and a way to contact you, right?

And yes, I know you shouldn't do anything just because Google wants you to. I usually stay away from that and just try to be helpful. But I've heard that this is a make-or-break rule.

Google Shopping currently requires a contact method for product results. So there may be some vertical search functionality that requires a contact form.
Google also said it would not impose penalties for not posting email addresses on websites. Additionally, keep in mind that Google may try to use your contact form to contact you about his SEO issues. Google has spoken about this not just once, but twice.
